He designs bars and restaurants for private investors and is a cocktail-menu consultant for some of the most prestigious bars across the globe. He has helped to create bars at the Sanderson Hotel, Soho House and The Lothbury Club, all in London.

Bridget Wardley has a Master’s degree in clinical nutrition. Formerly senior paediatric dietitian at King’s College Hospital, London, and now working as a consultant paediatric dietitian, she writes for several periodicals. She has two children.

Chris Idzikowski

Dr Chris Idzikowski, BSc, PhD, FBPsS, is Director of the Sleep Assessment and Advisory Service and the Edinburgh Sleep Centre. A leading expert on sleep disorders, he has served as Chairman of the British Sleep Society and the Royal Society of Medicine Forum on sleep problems. Dr Idzikowski has also sat on the boards of the European Sleep Research Society and the US Sleep Research Society. He is the author of four books, including Learn to Sleep Well (Watkins).

Chris Young

Chris Young is Campaign Co-ordinator for The Real Bread Campaign, a charity project with a mission to promote additive-free bread. In addition to compiling this book, Chris edits the quarterly magazine True Loaf, and wrote Knead to Know, the campaign’s first book. His work has appeared in publications including Spear’s MagazineThe Real Food Cookbook and the London ethical food magazine, The Jellied Eel, which he also edits.

Christine Bailey, M.Sc., is a qualified nutritionist, food and health consultant, chef and cookery teacher. A member of the Guild of Health Writers and writes for numerous health and food magazines. Christine runs courses and workshops, advises local authorities and schools, and works with a number of charities and organisations including the World Cancer Research Fund UK.

Clare Harris

Prof Clare Harris FBA is Curator for Asia Collections and Professor of Visual Anthropology at the Institute of Social and Cultural Anthropology, University of Oxford. She is also a Fellow of Magdalen College. Prof Harris’s pioneering work on Tibetan art, visual culture, material culture, photography and museums has effectively created a new field of study for which she has received recognition in the form of book prizes, research awards and invitations to lecture at universities around the world. Clare’s work on Tibet and its diaspora has been informed by her wider interests in contemporary art and aesthetics, the politics of collecting and representation (especially in museums, the art world, and photography), and a critical approach to the impact and aftermath of British imperialism in India and Tibet. Her doctoral thesis was published as In the Image of Tibet (1999), the first study of modernist and contemporary Tibetan art. Later books, such as The Museum on the Roof of the World (2012) and Photography and Tibet (2016) break new ground with their interrogation of the modes in which Tibet has been represented museologically, visually and politically, both by outsiders and Tibetans themselves. This work is the product of many years of research in Tibetan communities, as well as in archival contexts in Europe and North America. Clare continues to combine these methods in her latest project on the history and after-lives of photographs created in the Indian Himalayas since the colonial period. Much of her research feeds into curatorial activities at the Pitt Rivers Museum, in art galleries in the UK and Asia, and in projects with contemporary artists. Clare is very much a public-facing academic and curator who has given many talks for audiences outside academia, and has appeared on BBC Radio 3 and Radio 4.

Daniel Galmiche is the charismatic head chef of The Vineyard at Stockcross, Berkshire, who has gained or retained prestigious Michelin stars at four of Britain’s top restaurants. He trained under the tutelage of Michel Roux and regularly appears on UK TV, including Saturday Kitchen, Home Cooking with Rachel Allen and Market Kitchen. Daniel has gained a following throughout the world and won the Relais & Châteaux Rising Chef Trophy in 2011.
